Amino acid and protein profiling of rice (Oryza sativa L.) genotypes during storage at different intervals

Twenty rice genotypes with significant differences in protein and amino acid profiling were used in the experiments. During different storage intervals, the rice genotypes had difference in protein content at the time when the synthesis of methionine content andLysine content reached a maximum, but had difference in the time when the total phenol content reached a maximum, in which the inferior aroma quality genotypes were earlier than the high quality ones, and high aroma quality genotypes still kept high total phenol content.
